With cottage cheese and raisins
First, let's bake the pancakes ourselves. For this we need:
- flour - 1 glass;
- chicken egg - 3 pieces;
- milk - 500 milliliters;
- salt - half a teaspoon without top;
- sugar - 2 tablespoons without top;
- vegetable oil - 3 tablespoons.
So, let's start cooking. Beat eggs, salt and sugar thoroughly with a whisk or mixer until the sugar grains are completely dissolved. Add all the flour and continue stirring until smooth.
Then add a little warm milk in three or four passes. When the mass becomes completely homogeneous, add three tablespoons of vegetable oil, preferably refined. Knead a little more and start baking.
Initially, the frying pan must be greased with a small amount of sunflower oil using a silicone brush. Further, you need to lubricate only when necessary, if the pancakes begin to stick to the pan.
This pancake recipe is perfect for any of the following toppings. Therefore, in the following we will describe only the preparation of each of them. And pancakes can be prepared in the same way.
Let's start preparing the filling. Let's take for it:
- butter - 50 grams;
- cottage cheese - 0.5 kg;
- egg - 1 piece;
- sour cream - 2 tablespoons;
- sugar - 4 tablespoons;
- raisins - 50 grams.
To prepare the tender filling, wash the raisins and soak them in boiling water for 10 minutes. Mix the softened butter, cottage cheese, sugar and egg with a spoon until smooth and the sugar grains dissolve. Add the raisins and mix again. The filling is ready for use.
With egg and green onions
Required Ingredients:
- boiled chicken eggs - 8 pieces;
- green onions - 1 bunch;
- butter - 30 grams;
- salt to taste.
Cook eggs hard-boiled for 10 minutes, peel and cut into small cubes. We wash the green onions and chop finely, add to the eggs. Put salt and melted butter there. Stir and let it brew a little.
With liver and onions
Ingredients:
- any liver - 400 grams;
- onions - 200 grams;
- refined sunflower oil - 30 ml;
- butter - 50 grams.
We clean the liver of films, veins and cut into small cubes, about 1x1 cm. Finely chop the onion and fry with the liver in sunflower oil for 7 minutes over medium heat. Let the liver cool down and grind the mass in a blender until smooth. Add softened butter, salt to taste and a little black pepper. Stir until smooth.
With meat and mushrooms
Ingredients:
- boiled beef, pork or chicken - 0.4 kg;
- fresh champignons - 0.2 kg;
- onions - 0.1 kg;
- refined vegetable oil - 3 tablespoons;
- butter - 20 g;
- salt, pepper - to taste.
Finely chop the boiled meat or roll for minced meat. Finely chop the mushrooms and onion and fry in a pan for three minutes. Add meat, season with salt, pepper and fry for another three minutes. Transfer the filling into a bowl and cool to room temperature, add softened butter, stir thoroughly.
With apples and carrots
Ingredients:
- apples - 3 pieces;
- carrots - 1 piece;
- sugar - 110 grams.
Sweet and sour apples and one medium carrot, peel and three on a coarse grater. Put in a frying pan, add sugar and caramelize for 5-7 minutes. Put in a deep bowl and cool, if desired, you can add a little cinnamon.
With pumpkin and apples
Ingredients:
- pumpkin pulp - 0.5 kg;
- apples - 3 pieces;
- sugar - 100 grams;
- raisins - 30 grams;
- sesame seeds - 20 grams;
- honey - 1 teaspoon.
Cut the pumpkin into small cubes and freeze for 10 hours, or simmer with half the sugar norm for 40 minutes. We clean and rub the apples on a coarse grater. Pour the raisins with boiling water and let them steam.
Combine the cooled pumpkin with sugar, apples and heat in a pan for 7-10 minutes. Remove from heat, transfer to a bowl and cool. Add raisins, sesame seeds and honey. Knead thoroughly.
With chicken and cheese
Ingredients:
- boiled chicken meat - 350 grams;
- smoked sausage cheese - 200 grams;
- mayonnaise - 2 tablespoons without top;
- greens - one bunch.
Finely chop the pre-cooked and cooled chicken meat and put in a deep container. Grate the sausage cheese and add to the meat, finely chop the greens and send to the same place. Season everything with mayonnaise and mix well. The hearty filling is ready.
When the choice in favor of one of the fillings is made and everything is cooked, it remains only to complete the process. Place a spoonful of the filling on the edge of the pancake and roll it into a roll or envelope.
As a rule, the filling is placed on the fried side of the pancake, but this rule is not required. It remains to fry the pancakes on both sides in any oil and you can serve them to the table.
