- 250 g lightly salted salmon;
- 2 large potato tubers;
- 1 carrot;
- 2 fresh cucumbers;
- 0.5 jars of pitted olives;
- 0.5 cans of canned peas;
- 3 eggs;
- 0.5 cups mayonnaise;
- a bunch of green onions;
- salt, ground black pepper - to taste.
How to cook:
- Boil potatoes, carrots and eggs.
- Cool, peel and cut in the traditional way as for Olivier.
- Chop cucumbers, green onions and pitted olives.
- Combine the ingredients and add the chopped salmon.
- Season with mayonnaise, salt and pepper.
- Leave in the refrigerator for 2-3 hours.
From the specified amount of ingredients, three servings of Olivier salad with salmon and olives are obtained.
With pickled mushrooms
In this case, mushrooms will replace 2 products at once: sausage and cucumbers. Required Ingredients:
- 2 chicken eggs;
- 2 medium potato tubers;
- 200 g of pickled mushrooms;
- 100 g green peas;
- 50 g mayonnaise;
- 1 tbsp vegetable or olive oil;
- dill and cranberries - for decoration.
Boil eggs and vegetables, cut with mushrooms, add peas and season with mayonnaise. If the salad is dry, 1 tablespoon of vegetable or olive oil will help out.
There is no need to salt it specially, there is enough salt in the mushrooms. Pickled chanterelles or milk mushrooms will do. Good idea for those who don't eat sausage or meat. It can be served in the form of a ring, and decorated with dill sprigs and cranberries as a wreath.
With cheese
In this recipe, there are no cucumbers, and in addition to cheese, onions are added. The composition is as follows: 2 pieces of carrots and onions; 3 pieces of potatoes and eggs; 350 g of hard cheese; 200 g of canned green peas. Salad is dressed with mayonnaise - 150 g will be enough. The amount of salt and herbs is added to taste.
Preparation:
- Boil vegetables for cutting.
- Peel the eggs, divide into whites and yolks.
- Grate the cheese and whites on a coarse grater, and crush the yolks with a fork.

- 4 eggs;
- 300 g canned green peas;
- 3 pickled cucumbers;
- 250 g mayonnaise;

Cut vegetables and boiled eggs in the traditional way for Olivier - cubes. Add pickled cucumbers and smoked chicken to them - a leg or breast. Chopped red onions can be added if desired. Complete all steps with mayonnaise dressing. Such a salad should be allowed to stand for a couple of hours in a cold place.
With beef tongue
Many consider "Olivier" with beef tongue to be one of the most delicious versions of this salad. The delicacy differs not only in its special taste, but also in useful elements: vitamins of group B, PP and others. By the way, 65 grams of beef tongue contains the daily dose of vitamin B12 for humans.
So, for the preparation of the salad you will need the following components:
- 500 g beef tongue;
- 5 pieces of potatoes, eggs and pickled cucumbers;
- 1 can of green peas;
- 1 onion, preferably red onion
- 250-300 g of mayonnaise;
- salt, ground black pepper - to taste.
Preparation:
- Soak the tongue for 30 minutes in cold water, then thoroughly clean and rinse it.
- Cook with spices and carrots until tender: 2-4 hours - depending on its size.
- Boil eggs, potatoes, carrots and cut them into cubes.
- Cut the cucumber as well.
- Remove the skin from the chilled tongue, all unnecessary and also cut into cubes.
- Mix all the ingredients, add canned peas, onions and season with mayonnaise.
A special form will help to divide and arrange the salad in portions.
With red caviar and shrimps
The products for this salad are not cheap, it is expensive to cook it every time, but it's worth trying at least once. So let's take:
- 1 boiled chicken fillet;
- 250-300 g frozen shrimp;
- 250 g green peas;
- 3 eggs and boiled potatoes;
- 2 pickled cucumbers;
- 1 onion;
- mayonnaise, salt, pepper, lemon juice - to taste;
- some red caviar to decorate the dish.
Cooking process:
- Cut eggs and potatoes into traditional cubes.
- Chop the onion and combine all the ingredients.
- Add chopped cucumbers and peas.
- Pour boiling water over the shrimps and soak in hot water for 60 seconds.
- Drain the shrimp, sprinkle with lemon juice and add to the rest of the food.
- Stir in mayonnaise, add salt and pepper to taste.
Serve the salad in portions, garnish with a spoonful of red caviar.
