The maximum shelf life of wines in open bottles

Any open wine should be stored at a low temperature, it is customary to use a refrigerator, cellar or other dark and cool place. But even in such conditions, the fragrant liquid quickly begins to lose its attractive sides.

The indicator, how much home or open wine can be stored without loss of valuable properties, depends on the type of drink:

  • Sparkling. After removing the cork, the gas starts to leave the product, if nothing is done, it will completely exhale in about 4 hours. But even if the bottle is corked with a cork, this wine will not be able to be stored for more than a day.
  • Pink. A very light product, which begins to lose its delicate taste almost immediately after opening. If you follow the recommendations, then the shelf life of the drink can be increased to 3 days.
  • Red. The indicators depend on the texture of the composition. A light and airy drink can be kept in the refrigerator for up to 3 days. Dense and heavy composition will retain its properties for up to 5 days.

Tip: Lovers of stretching pleasure for a few days should pay attention to special young wines, the taste of which is revealed only on the 2-3 day after opening the bottle.

  • White. Despite the fact that the average shelf life of white wine is set at around three days, the fruit notes in it begin to weaken within an hour after the air enters. This is facilitated by the light texture of the drink and the low alcohol content. For this reason, white wine is best consumed within a day.
  • Dessert fortified. High levels of sugar and alcohol allow the wine to retain its original appeal and purity of taste for about a week. But for this you have to take care of the optimal conditions for the content of the product.

These dates are considered average and relevant only in the case of using cold. At room temperature, the drink will not just fade quickly, it can deteriorate for several hours and even cause food poisoning.

Conditions for storing home wine

Home wine has long ceased to be a luxury item, today anyone can make an original or traditional drink even in an apartment. Quality storage of wine in this case is based on the following rules:

  1. Optimum temperature. Light wines can be stored at a temperature of + 10ºС, strong - under conditions of a couple of degrees warmer.
  2. Suitable capacity. If the composition was originally in plastic bottles or a keg, it should be poured into a container of dark glass.
  3. Stopper. If possible, this should be a product made of natural material. In this case, the drink in bottles is stored in a horizontal position. The liquid will wash the cork, preventing it from drying out and reducing the tightness.
  4. Humidity. For home wines it will be better if this figure is at least 60-80%.
  5. Homemade wine actively absorbs surrounding odors. No matter how much the product is stored in the refrigerator, it is necessary to limit its proximity to sauerkraut or sour vegetables, meat and fish.

Even with short-term storage of house wine, you can detect a deposit on the bottom of the bottle. It does not need to get rid of by filtering or pouring a drink. It does not reduce the properties of the product, it does not spoil the taste, even slightly ennobles the fragrance and prolongs its shelf life.

Techniques for extending the storage of open wine

  • Use of vacuum. There is a special device with which the oxygen can be pumped out of the tank and the cap closed with a stopper. At the exit, we get a practically new bottle of wine. If all the manipulations have been done correctly, then the expiry date is counted first.
  • Change of packaging. In the absence of profile devices, a more primitive variant is allowed. The liquid is simply poured into a vessel of suitable volume, it must fill the new container almost up to the top. In this case, you need to abandon plastic bottles in favor of glass containers. This method is strictly not suitable for sparkling wines, after the first transfusion of the drink will leave all the bubbles.
  • Freezing. Quite a non-standard approach, which allows not so much to extend the shelf life of wine, how many to create a new product. Remainder of liquid is poured into ice molds and frozen. The received products can be stored up to several months. Subsequently, from such blanks are obtained original sauces, marinades, desserts and dressings for meat dishes.
